Simple, easy and quick-to-cook is what the recipes in litebite are suppose to be. Black-eyed beans is one such quickie.
Ingredients:
Method: Wash and soak the beans till all the ingredients are assembled. Peel and grate the onion with tomato using a hand grater. Heat oil in a kadai, add mustard seeds and let it splutter. Add the grated onion & tomato, and all the dry spices. Cook it till the raw smell disappears, or about 5 minutes on medium heat. Pour water and let it cook till done. Pressure cooker will reduce the time of cooking (5 minutes on high flames) or microwave the same for 10 minutes high.. Sprinkle fresh coriander and serve with plain rice or hot chapattis.
