Lunchbox Bites: All In Your Box


                 Black-eyed Beans

 

Simple, easy and quick-to-cook is what the recipes in litebite are suppose to be. Most of the recipes are for the lunch-boxes and for the people on the run who find themselves at loggerheads when it comes to time & nutrition. Busy couples, singletons and novice cooks are always at the back of mind while posting the recipes.

Black-eyed beans is one such quickie.

 

Ingredients:          

  • 1 cup Black-eyed beans(chawli)
  • 1 medium size onion
  • 1 medium size tomato
  • 2 tsp coriander powder
  • 1/2 tsp. cumin powder(jeera)
  • 1/2 tsp chilly powder
  • 1 tsp. mustard seeds
  • salt as desired
  • a pinch of asafoetida(hing)
  • 2 cups water
  • 1 tbsp.oil   

 

Method: Wash and soak the beans till all the ingredients are assembled. Peel and grate the onion with tomato using a hand grater. Heat oil in a kadai, add mustard seeds and let it splutter. Add the grated onion & tomato, and all the dry spices. Cook it till the raw smell disappears, or about 5 minutes on medium heat. Pour water and let it cook till done. Pressure cooker will reduce the time of cooking (5 minutes on high flames) or microwave the same for 10 minutes high.. Sprinkle fresh coriander and serve with plain rice or hot chapattis.  

Note: 

  • Soak the beans at night before cooking to reduce the time of ccoking.
  • Include 1 tsp of ginger for extra zing !
  • 1/2 tsp of garlic paste will add the taste and the health benefits too.
  • Add diced carrots or potatoes for a difference.
