Here is a quicky using the same recipe as in Brinjal in your box. 

Ingredients :

• cooked rice one cup
• 1/2 cup brinjal
• Spices & other ingredients (as in brinjal in your box)

Method : Cook brinjal following the same recipe as in brinjal in your box. Mix the cooked rice and prepared brinjal, garnish with fresh coriander.

Note :

• small variety of brinjal tastes better for this recipe.
• Can add a small potato cut in pieces for a different taste.
