Lunchbox Bites : Veggies in Your Box

If you ever said "never " to this humble beans, you'll never say it again once you discover the numerous health benefits associated with beans. A palnt of legume family Gawar phali as is called in Hindi can be used to makes many accompaniments in a meal. Be it a Usli in South or a simple subji, it surely does give a tasty twist to the meal.
The following recipe is my personal favorite as it is simple and retains the nutrients of the veggie. I often keep changing and adding ingredients to the recipe for extra zing.

Wash and boil the beans in a pressure cooker or a steamer for 5 minutes. Take out and string the beans by pinching the corners. Cut the boiled beans in small size, dice tomato and onion finely. Heat oil in a kadia and add mustard seeds. Add the sliced onion and cook till it change colour, and then add rest of the ingredients. Let it cook for 5 minutes and serve it with hot chapattis or plain rice as accompaniment.
