Basic plain coins
Ingredients:
3 tbsp.boiled rice, 1 tbsp.urad dal (black gram), 1 tsp.fenugreek seeds, a pinch of salt.
Method:
Wash and soak the rice, dal and fenugreek seeds for 3 hrs.
Grind all together till it becomes a very fine paste. Add salt and mix well. Keep it in a warm place for about 10 -15 hrs and let it ferment.
This is the basic batter for making coins, which can be stored in fridge for 4 to 5 days.
Heat a griddle (tawa) and drop a spoonful of batter on it, sprinkle little oil and shallow fry both the sides till lightly brown.
Use the following variations to make it more child friendly.
Variations :

1- Spreads: Use squeezy jams, sauces to make smiley face and animal figures. Other options are cheese cubes, peanut butter, honey,mayonnaise, fruit syrups. These goes well with younger kids who love variations more than nutrition.

2- Veggie coins: Vegetables like carrot, cabbage, potato and beans can be grated and spread on the basic plain coins and shallow fry for a minute. Other options are bean sprouts, shredded spinach, coloured capsicum, fresh peas and corn. Can add shredded cheese to make it more exotic. Use sprouts of grams to make a healthy option (picture above).

3- Fruit coins: Seasonal fruits can be cut into exciting shapes and spread on the basic plain coins. Apple, banana, oranges and pomogranate will go well with coins.
4- Cereal coins: Is a much healthier option for elder kids as it has cereals and pulses which are hard to digest for small kids.
Ingredients: Cereals (ragi, millets, corn, barley) , pulses , whole grams, soya
a pinch of salt, buttermilk as required, Pepper powder a pinch.
Method: Clean and grind all the above dry ingredients and store in a tight box. Can be kept for a period of one month or more if kept in a fridge.
Take required amount of powder, mix salt and buttermilk to make a batter of pouring consistency. Make coins and use the above variations to make it child friendly.
