Litebite lunchbox : All In a Box

The bright orange colour pumpkin is loaded with beta-carotene, an anti-oxidant to fight with the free radicals in our body. Low in calorie and rich in potassium makes it a perfect veggie for those who watch their weight.
I got the recipe for this dish some 15 years back from the lunch box of a colleague in my office in New Delhi. Since then it is a regular in my kitchen with little variations now and then. With very few ingredients and less time to cook this dish makes a real anecdote for the morning rush hours.
Ingredients :
Method : Peel and cut the pumpkin in bite size peices. Heat oil in a wok and add fenugreek seeds let it become a bit brown (don't burn the seeds, it will turn the dish bitter). Add garlic and green chilly cut into small pieces. Fry for a minute and then add pumpkin, salt and asafoetida, stir to mix all the ingredients and close with a lid. Remove from the flame after 3 minutes mash the pumpkin a little and garnish with fresh coriander.
Note : Makes a good spread for chapatti rolls and bread sandwiches.
