1-Vegetable Rolls :
Ingredients: Vegetables 200gms, spices (chilli powder 1/3 tsp, turmeric powder 1/3 tsp, cumin pwdr 1/3 tsp, coriander pwdr 1/2 tsp) mustard seeds 1/2 tsp, oil 2 tbsp, salt 1/4 tsp.
Method: Cut the vegetable of your choice in bite size pieces. Vagetables like carrots and cabbage can be grated and used for the same recipe. Heat oil in a wok, add mustard seeds and let it splutter, add all the dry spices and stir fry for a minute. Now add the vegge and let it cook for 10 mins, stirring in between. Stuffing is done.
Take a chappati, put the filling in one corner and roll along it. Secure the wrap with a silver foil, which also makes it easy to hold and carry it anywhere without spilling the filling inside.
Preferred vegetables : For the above recipe are potatoes, carrots, cauliflower, cabbage, french beans, cluster beans, ladies finger (ochra), bottle guard.
Note: Vegetables like carrots, cabbage, bottle guard release water when cooked. Such veggies should be cooked for little extra time till the water dries up completely else it will make the rolls soggy.
2-Potato and peas rolls:
Ingredients: 2 boiled potatoes,1/2 cup fresh peas, spices(chilli powder 1/3 tsp,turmeric powder 1/3 tsp, cumin pwdr 1/3 tsp, coriander pwdr 1/2 tsp), salt 1/4 tsp, oil 1 tbsp, mustard seeds 1/2 tsp.
Method: Boil and store the potatoes in fridge, it will reduce the workload in morning hours. Heat oil, add mustard and let it splutter. Add all spices, boiled potatoes, peas and salt. Cook for 5 mins on low flame.
Make rolls using the chappatis.
